A quick and easy Halloween-themed Mexican street corn dip that’s creamy, smoky, and slightly spicy. Perfect for parties, it comes together in about 15 minutes with simple ingredients and a spooky twist.

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup cotija cheese, crumbled
  • 1/4 cup fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1–2 tablespoons black food coloring (gel preferred)
  • 1/4 cup black sesame seeds (optional, for garnish)
  • 1–2 dried chili peppers or candy eyeballs (for decoration, optional)
  • 1 large bag tortilla chips (thick-cut restaurant-style recommended)
  • Optional: fresh cilantro, extra cotija, lime wedges

Instructions

  1. Char the corn: Heat a dry skillet over high heat. Add the drained corn in a single layer. Let it sit undisturbed for 2 minutes until black spots form. Stir and repeat for another 2-3 minutes. Transfer to a plate to cool slightly.
  2. Soften the cream cheese: In a large mixing bowl, microwave the cream cheese for 20-30 seconds until soft and spreadable. Alternatively, leave at room temperature for 30 minutes.
  3. Mix the base: Add sour cream, mayonnaise, half the cotija cheese, lime juice, chili powder, smoked paprika, cumin, salt, and pepper to the softened cream cheese. Stir until smooth and well combined. Taste and adjust seasoning.
  4. Fold in the corn: Add the charred corn (cooled) and stir gently until evenly distributed.
  5. Add the Halloween touch: If using black food coloring, mix 1 tablespoon with 2 tablespoons of sour cream in a small bowl. Dollop on top of the dip and swirl with a knife. Sprinkle black sesame seeds over the top.
  6. Chill: Cover the bowl and refrigerate for at least 30 minutes (15 minutes if in a rush).
  7. Serve: Transfer to a serving platter. Sprinkle with remaining cotija cheese, fresh cilantro, and a pinch of chili powder. Arrange tortilla chips around the bowl. Add candy eyeballs or dried chili peppers for decoration if desired.

Notes

For best texture, ensure cream cheese is fully softened. Charring the corn is key for smoky flavor. Start with a small amount of black food coloring to avoid gray-green color. Dip can be made up to 2 days ahead; add garnishes just before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days. Not recommended for freezing.
