  • 1 (750 ml) bottle of vodka (80–100 proof)
  • 2 cups granulated sugar
  • 2 cups filtered water

Instructions

  1. Wash and dry the lemons thoroughly with a vegetable brush and clean towel.
  2. Using a vegetable peeler, remove the yellow zest in long strips, avoiding the white pith as much as possible.
  3. Place all lemon peels into a clean glass jar and pour the entire bottle of vodka over them. Ensure peels are submerged, seal tightly.
  4. Steep in a cool, dark place for 10 to 14 days, shaking gently every few days.
  5. On day 10 or 14, combine sugar and water in a saucepan. Heat over medium heat, stirring until sugar dissolves. Let cool completely to room temperature.
  6. Strain the infused vodka through a fine-mesh strainer lined with a coffee filter into a large bowl or jar. Discard peels.
  7. Pour the cooled simple syrup into the strained vodka and stir gently to combine. Taste and adjust sweetness or strength if desired.
  8. Use a funnel to pour the limoncello into storage bottles. Seal tightly.
  9. Optional: Age in the refrigerator for at least a week before serving for smoother flavor.
  10. Chill in the freezer for at least 4 hours before serving. Serve ice-cold in small chilled glasses.

Notes

Avoid the white pith to prevent bitterness. Use organic lemons to avoid pesticides. Let simple syrup cool completely before adding to vodka to prevent cloudiness. For a stronger limoncello, use higher-proof vodka or substitute half the vodka with Everclear. The limoncello improves with age; store in the freezer for up to 6 months.
