  • 3 cups frozen shredded hash browns
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 1 ½ cups whole milk
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup diced bell peppers (optional)
  • ¼ cup chopped green onions (optional)
  • ½ cup cooked and crumbled bacon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 baking dish with butter or non-stick spray.
  2. Cook the sausage in a large skillet over medium-high heat until browned and no longer pink, about 6-8 minutes. Drain excess grease and set aside to cool slightly.
  3. Spread the frozen hash browns evenly in the bottom of the greased baking dish. Do not press them down.
  4. Sprinkle the cooked sausage evenly over the hash browns, then top with both cheeses, reserving about ½ cup of cheese for later.
  5. In a large mixing bowl, whisk together the eggs, milk, sour cream, salt, pepper, garlic powder, and onion powder until smooth.
  6. Slowly pour the egg mixture over the casserole, making sure it covers everything evenly. Gently press down with a spatula to help the liquid seep into the hash browns. Let it sit for 5 minutes.
  7. Place the dish in the preheated oven and bake for 35-40 minutes. After 25 minutes, sprinkle the reserved cheese on top. Continue baking until the center is set and the edges are golden brown. A knife inserted in the center should come out clean.
  8. Let the casserole rest for 10 minutes before serving.

Notes

For a make-ahead option, assemble the casserole the night before, cover, and refrigerate. Add 10-15 minutes to the baking time if starting cold. For extra crispy top, broil for 1-2 minutes at the end. Let the casserole rest for 10 minutes after baking to ensure clean slices.
