Easy Mummy Meatball Sub Bites: Kid-Friendly Halloween Dinner

These adorable mummy meatball sub bites are made with frozen meatballs, Hawaiian sweet rolls, mozzarella, and olive eyes. They come together in under 30 minutes for a fun, kid-friendly Halloween dinner that tastes as good as it looks.

  • 24–30 mini frozen meatballs (or 12–15 regular-sized, halved)
  • 1 package (12 count) Hawaiian sweet rolls
  • 1 cup marinara sauce
  • 8 ounces low-moisture mozzarella cheese, cut into thin strips
  • 24–30 sliced black olives
  • 1 tablespoon melted butter (optional)
  • Garlic powder and dried oregano (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a sheet pan with parchment paper.
  2. Warm the marinara sauce in a small saucepan over medium-low heat or in the microwave for 60-90 seconds.
  3. Separate the Hawaiian rolls but keep them connected in a single layer on the sheet pan. Slice each roll in half horizontally, leaving them attached at the bottom.
  4. Spoon about 1 tablespoon of warm marinara onto the bottom half of each roll.
  5. Place one frozen meatball (or half a regular-sized one) on top of the sauce on each roll. Press down gently.
  6. Slice mozzarella into thin strips (about 1/4 inch wide and 3-4 inches long). Lay 2-3 strips over each meatball, crossing them to look like mummy wrappings, leaving a small gap near the top for the face.
  7. Place two sliced black olives in the gap on each meatball for eyes. Press gently into the cheese.
  8. Gently place the top half of each roll over the mummy meatball.
  9. Optional: Brush tops with melted butter and sprinkle with garlic powder and dried oregano.
  10. Bake for 12-15 minutes, until cheese is melted and bubbly and rolls are golden brown. Internal temperature of meatballs should reach 165°F (74°C).
  11. Let cool on the pan for 2-3 minutes before serving. Serve warm with extra marinara for dipping.

Notes

Don’t thaw the frozen meatballs; they release moisture as they bake. Use low-moisture mozzarella (not fresh) to avoid sogginess. For stubborn olive eyes, use a toothpick to secure them (remove before serving). Make extra marinara for dipping. Can be assembled up to 24 hours ahead and refrigerated, or frozen unbaked for up to 3 months.
