These Easy No-Bake Champagne Cheesecake Bites are the perfect party dessert—light, creamy, and bursting with subtle champagne flavor. No oven required, just a few simple ingredients and a little patience for chilling.

  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

  • ¼ cup champagne or sparkling wine (brut or extra dry)
  • 1 cup heavy cream, cold
  • 2 tablespoons powdered sugar
  • ¼ cup champagne or sparkling wine (for glaze, optional)
  • ½ cup white chocolate chips, melted (optional)
  • Gold sprinkles or edible glitter (optional)
  • Fresh berries (raspberries or strawberries, optional)

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and a pinch of salt. Pour in melted butter and stir with a fork until the mixture looks like wet sand. Press about 1 ½ tablespoons of this mixture firmly into the bottom of each muffin liner. Use the bottom of a shot glass or small measuring cup to press it down flat and even. Place the tray in the fridge while you make the filling.
  2. Whip the cream: In a clean, cold bowl, pour cold heavy cream and powdered sugar. Using an electric hand mixer on medium-high speed, whip the cream until stiff peaks form, about 3-4 minutes. Set aside in the fridge.
  3. Make the cheesecake base: In a separate large bowl, beat softened cream cheese with ½ cup granulated sugar and vanilla extract on medium speed until smooth and creamy, about 2 minutes. Scrape down the sides. Slowly pour in ¼ cup champagne while mixing on low speed until just combined.
  4. Fold it all together: Take the whipped cream out of the fridge. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it. Then add the remaining whipped cream and fold gently until no white streaks remain. Be patient and gentle to keep the mixture light and fluffy.
  5. Fill the liners: Spoon or pipe the cheesecake mixture into the prepared muffin liners, filling them almost to the top. Smooth the tops with a small offset spatula or the back of a spoon. Tap the tray gently on the counter to release any air bubbles.
  6. Chill: Place the muffin tin in the refrigerator for at least 4 hours, but overnight is best. The bites need time to firm up completely.
  7. Add the toppings (optional): Once the bites are fully set, gently peel away the paper liners. For the glaze, melt white chocolate chips with ¼ cup champagne in a small saucepan over low heat, stirring constantly until smooth. Let cool for 2 minutes, then drizzle over the bites. Add fresh berries and a sprinkle of gold glitter. Return to the fridge for 15 minutes to set the glaze.

Notes

Make sure cream cheese is fully softened to room temperature to avoid lumps. Use a dry sparkling wine (brut champagne or dry Prosecco) for best flavor. Do not overmix after adding champagne. Chilling time is non-negotiable—at least 4 hours, overnight is best. These can be made up to 3 days in advance; add toppings just before serving. Do not freeze.
