  • 1/3 cup (60g) dark chocolate chips (around 70% cocoa)
  • 1 tablespoon espresso powder
  • 1/2 cup (125g) natural peanut butter
  • 1/4 cup (60ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Pulse the oats in a food processor 5-7 times until coarse, sandy texture (about 2 minutes). If no processor, use quick oats.
  2. Melt dark chocolate chips in microwave-safe bowl in 20-second bursts, stirring until smooth (about 1 minute). Set aside to cool slightly.
  3. In a mixing bowl, combine pulsed oats, espresso powder, salt, and optional chia seeds.
  4. Add peanut butter, honey or maple syrup, vanilla extract, and melted chocolate. Mix well until sticky but manageable. Adjust texture with water/milk or oats if needed.
  5. Roll mixture into 1-inch balls (about 15-18 balls). Wet palms lightly if mixture sticks.
  6. Place balls on baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Enjoy immediately or store in airtight container in fridge up to one week.
