These no-bake peanut butter football energy bites are quick, easy, and made with simple pantry ingredients. Perfect for game day, lunchboxes, or a healthy snack that tastes like a treat.

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 tablespoon melted white chocolate or white candy melts (optional, for laces)
  • Additional mini chocolate chips (optional, for stitches)

Instructions

  1. In a large mixing bowl, stir together the rolled oats, ground flaxseed, and a pinch of sea salt.
  2. Add the creamy peanut butter, honey, and vanilla extract. Stir until a cohesive, slightly sticky dough forms (about 2 minutes). If too dry, add a teaspoon more honey; if too wet, add a tablespoon more oats.
  3. Gently fold in the mini chocolate chips until evenly distributed.
  4. Cover the bowl and refrigerate for 15-20 minutes to make the dough easier to handle.
  5. Line a baking sheet or large plate with parchment paper. Scoop about 1 tablespoon of the chilled mixture, roll into a ball, then pinch the ends to form an oval football shape. Place on the parchment. Repeat with remaining mixture (makes 16-18 bites).
  6. If desired, melt white chocolate or candy melts. Transfer to a small piping bag or zip-top bag with a tiny corner snipped off. Pipe two short parallel lines down the center of each football for laces. Optionally, press two mini chocolate chips into the sides for stitches.
  7. Refrigerate for at least 30 minutes to firm up. For a quicker set, freeze for 15 minutes.

Notes

For best texture, use old-fashioned rolled oats (not instant). If peanut butter is too oily, add an extra tablespoon of oats. For nut-free, substitute sunflower seed butter. The bites get better after a day in the fridge as flavors meld. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
