  • ½ cup (130g) creamy peanut butter (room temperature)
  • ⅓ cup (110g) honey
  • ⅓ cup (60g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, mini chocolate chips, and ground flaxseed. Stir to distribute evenly.
  2. Add the peanut butter, honey, vanilla extract, and salt. Mix with a spatula or spoon until the mixture starts to come together.
  3. Use your hands to knead the mixture thoroughly, ensuring all oats are coated. The mixture should hold its shape when squeezed. If too dry, add 1 tablespoon more honey; if too sticky, add 1 tablespoon more oats.
  4. Line a baking sheet or plate with parchment paper. Roll about 1 tablespoon of the mixture into a firm ball and place on the prepared sheet. Repeat with remaining mixture (makes about 16-18 bites).
  5. Refrigerate for at least 30 minutes to firm up. Serve cold. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
