  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the wet ingredients. In a large mixing bowl, add 1 cup of creamy peanut butter, 1/2 cup of honey, and 1 teaspoon of vanilla extract. Stir them together until fully combined and smooth.
  2. Add the dry ingredients. Pour in 1 1/2 cups of old-fashioned rolled oats, 1/4 cup of ground flaxseed, 1/4 cup of protein powder, and a pinch of sea salt. Stir vigorously until no dry spots remain, about 2 minutes.
  3. Fold in the chocolate chips. Add 1/2 cup of chocolate chips and fold gently until evenly distributed.
  4. Let the mixture rest. Cover the bowl and refrigerate for 15 minutes to allow the oats to absorb moisture.
  5. Prepare your workspace. Line a baking sheet or large plate with parchment paper.
  6. Roll the energy balls. Use a cookie scoop or tablespoon to portion the mixture, then roll each portion between your palms to form smooth balls. If sticky, wet hands slightly with water.
  7. Place the balls on the prepared sheet. Leave a little space between each one. You should get about 18 to 20 balls.
  8. Chill before serving. Refrigerate the energy balls for at least 30 minutes to firm up before eating.

Notes

Let the mixture rest in the fridge for 15 minutes before rolling to allow oats to absorb moisture. If mixture is too sticky, wet hands slightly with water.
