Easy No-Bake Strawberry Icebox Cake Recipe with Golden Oreo Crust

A simple, no-bake dessert featuring a buttery Golden Oreo crust layered with whipped cream and macerated strawberries, perfect for a quick and elegant treat.

  • 24 Golden Oreo cookies (about 1 ¾ cups crushed)
  • 6 tablespoons unsalted butter, melted
  • 2 cups heavy whipping cream, cold
  • ¼ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups fresh strawberries, hulled and sliced (about 1 pint)
  • 2 tablespoons granulated sugar

Instructions

  1. Crush the Golden Oreos finely using a food processor or place them in a zip-top bag and crush with a rolling pin until you have about 1 ¾ cups of crumbs. Pour the crumbs into a medium bowl and stir in 6 tablespoons of melted unsalted butter until the mixture resembles wet sand. (This should take about 5 minutes.)
  2. Transfer the crumb mixture into a 9×9-inch square pan or springform pan. Use the bottom of a glass or your fingers to press the crumbs firmly and evenly into the bottom. Place the crust in the refrigerator to chill while you prepare the filling. Chill for at least 30 minutes.
  3. In a bowl, toss the sliced strawberries with 2 tablespoons of granulated sugar. Let them sit at room temperature for 15-20 minutes to macerate.
  4. Pour 2 cups of cold heavy whipping cream into a large, chilled mixing bowl. Add ¼ cup powdered sugar and 1 teaspoon vanilla extract. Using a hand mixer or stand mixer, whip on medium-high speed until soft peaks form, about 3-5 minutes.
  5. Spread about half of the whipped cream evenly over the chilled Oreo crust. Spoon half of the macerated strawberries and some of their juice on top, spreading gently. Repeat the layers with the remaining whipped cream and strawberries.
  6. Cover the cake tightly with plastic wrap or aluminum foil. Refrigerate for at least 6 hours or overnight to allow flavors to meld and crust to soften.
  7. Remove from the fridge about 10 minutes before serving. Slice with a sharp knife, wiping between cuts to keep layers neat.

Notes

Keep everything cold for best results. Do not overwhip the cream to avoid graininess. Press the crust firmly to prevent crumbling. Macerating strawberries enhances sweetness and juiciness. Chill the cake for at least 6 hours or overnight for optimal texture and flavor melding. If whipped cream softens after chilling, add a fresh dollop before serving.
