  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add melted butter, sugar, egg, and vanilla extract. Stir until well combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Stir gently until just combined. Fold in chopped walnuts.
  5. Pour batter into prepared loaf pan and spread evenly. Sprinkle extra walnuts on top if desired.
  6. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let cool in the pan for 10 minutes, then transfer to a cooling rack. Cool completely before slicing.

Notes

For best results, use very ripe bananas with brown spots. Toast walnuts before adding for extra crunch. If top browns too quickly, tent with foil for last 15 minutes. Let cool completely before slicing for cleaner cuts.
