  • 1 cup (200g) granulated sugar
  • ½ cup (50g) unsweetened cocoa powder (Dutch-process or natural)

  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup (120ml) hot coffee, freshly brewed
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted if lumpy
  • 3–4 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Mini chocolate chips or black decorating gel (for ghost eyes)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt for about 30 seconds.
  3. Make a well in the center and add buttermilk, vegetable oil, eggs, and vanilla extract. Whisk gently until just combined (batter will be thick and slightly lumpy).
  4. Slowly pour in hot coffee while whisking gently until batter is smooth and thin.
  5. Divide batter evenly among the 12 liners, filling each about ⅔ to ¾ full.
  6. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the buttercream: In a large bowl, beat softened butter on medium speed until smooth and creamy, about 2 minutes.
  8. Gradually add powdered sugar, one cup at a time, beating on low. Add vanilla, salt, and 2 tablespoons heavy cream. Beat on medium-high for 2-3 minutes until light and fluffy. Add remaining cream if needed for desired consistency.
  9. Transfer buttercream to a zip-top bag and snip a small corner (about ¼ inch wide). Pipe a tall, rounded swirl onto each cooled cupcake to form a ghost shape.
  10. While frosting is soft, press two mini chocolate chips into the front of each ghost for eyes. (Optional: pipe an ‘O’ shape for a mouth.)
  11. Refrigerate for 15 minutes to set frosting before serving or storing.

Notes

Do not overmix the batter; a few lumps are fine. Use room temperature ingredients for best results. The hot coffee is essential for deepening the chocolate flavor and adding moisture—it does not make the cupcakes taste like coffee. Cool cupcakes completely before frosting to prevent buttercream from melting. For a dairy-free version, use dairy-free buttermilk substitute and dairy-free butter.
