A quick and easy one-pan recipe featuring tender, flaky salmon and crisp asparagus cooked in a buttery garlic lemon sauce. Perfect for busy weeknights or last-minute dinners.

Ingredients

Scale
  • 2 salmon fillets (about 6 oz / 170 g each, skin on for best crispiness)
  • 1 bunch fresh asparagus, woody ends trimmed
  • 4 tablespoons unsalted butter, divided
  • 3 cloves fresh garlic, minced
  • 1 large lemon, zested and juiced
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste (kosher salt preferred)
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the asparagus by snapping off the woody ends (about 1 to 2 inches) and set aside.
  3. Pat the salmon fillets dry with paper towels to remove excess moisture.
  4. Season both sides of the salmon with salt and pepper.
  5. Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large oven-safe skillet over medium-high heat.
  6. When the butter starts to foam, place the salmon fillets skin-side down carefully in the pan.
  7. Sear the salmon for 3-4 minutes without moving it to develop a crispy skin.
  8. Flip the salmon gently and cook for another 2 minutes.
  9. Add minced garlic, lemon zest, and lemon juice around the salmon.
  10. Nestle the trimmed asparagus around the salmon and dot with the remaining 2 tablespoons of butter.
  11. Transfer the skillet to the preheated oven and roast for 6-8 minutes until the salmon is opaque and flakes easily, and the asparagus is tender-crisp.
  12. Remove from the oven and garnish with chopped parsley. Serve immediately with the buttery lemon garlic sauce spooned over the top.

Notes

Pat salmon dry for crispy skin. Use room temperature butter to avoid burning. Control heat to medium-high for searing. Add lemon juice after garlic to prevent burning. Adjust oven time for thicker fillets. Can substitute trout or Arctic char for salmon. For dairy-free, use olive oil instead of butter.
