  • 3 cloves garlic, minced

  • 1 can (8 oz or 227g) tomato sauce
  • 1 can (15 oz or 425g) black beans, drained and rinsed
  • 1 can (15 oz or 425g) corn, drained
  • 2 cups (480 ml) low-sodium beef broth
  • 1 packet (1 oz or 28g) taco seasoning
  • 1 packet (1 oz or 28g) ranch seasoning
  • Optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, fresh cilantro, diced avocado, crushed tortilla chips, lime juice

Instructions

  1. Brown the beef: Place a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned all over (about 6-8 minutes). Spoon out excess fat, leaving about 1 tablespoon.
  2. Sauté the aromatics: Add the diced onion to the pot and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the seasonings: Sprinkle the taco seasoning and ranch seasoning over the beef and onion mixture. Stir and cook for 1 minute to toast the spices.
  4. Pour in the liquids: Add the diced tomatoes (with juices), tomato sauce, and beef broth. Stir well, scraping up any browned bits from the bottom of the pot.
  5. Add the beans and corn: Stir in the drained black beans and corn. The soup will look thin but will thicken as it simmers.
  6. Simmer: Bring the soup to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until the flavors meld and the broth thickens slightly. Taste and adjust seasoning if needed.
