Easy Overnight Hash Brown Egg and Sausage Breakfast Casserole

A simple, hearty breakfast casserole made with hash browns, sausage, eggs, and cheese that you prepare the night before and bake in the morning for a perfect, stress-free meal.

  • 1 pound (450 g) frozen shredded hash browns, plain and unseasoned
  • 1 pound (450 g) bulk breakfast sausage (mild or spicy)
  • 8 large eggs, room temperature
  • 1 cup (240 ml) whole milk (or 2% or dairy-free milk like oat milk)
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley (optional)
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the sausage in a skillet over medium heat, crumbling it and cooking until browned and cooked through, about 7–8 minutes. Drain excess fat if needed.
  3. In the same skillet, sauté the chopped onion and minced garlic for 2–3 minutes until soft and fragrant. Combine with the cooked sausage in a bowl and let cool slightly.
  4. In a large bowl, mix the frozen hash browns with the sausage mixture, half of the shredded cheddar cheese, and dried herbs if using. Toss well to combine.
  5. In another bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy.
  6. Lightly spray or butter a 9×13-inch casserole dish. Spread the hash brown and sausage mixture evenly in the dish.
  7. Pour the egg mixture over the top, pressing gently with a spatula to soak everything evenly.
  8. Sprinkle the remaining shredded cheddar cheese over the top.
  9. Cover the dish tightly with plastic wrap or foil and refrigerate overnight (at least 6 hours).
  10. The next morning, remove the casserole from the fridge and let it sit at room temperature for about 15 minutes while the oven heats to 350°F (175°C).
  11. Bake uncovered for 45–50 minutes, or until the top is golden brown and the center is set (a knife inserted should come out clean).
  12. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Use thawed but cold hash browns to avoid sogginess. Drain excess grease from sausage to prevent greasiness. Letting the casserole rest overnight improves texture and flavor. If cheese browns too quickly, tent with foil halfway through baking.
