Easy Overnight Peanut Butter Banana Oats – Best Make-Ahead Breakfast

Creamy, naturally sweet overnight oats with peanut butter and banana that taste more like dessert than breakfast. Perfect for feeding a crowd or meal-prepping a healthy, satisfying breakfast with just 10 minutes of prep.

  • 2 cups (180g) rolled oats (old-fashioned oats)
  • 2 cups (480ml) milk of choice (whole milk, oat milk, almond milk, or coconut milk)
  • 1 cup (240g) plain Greek yogurt (full-fat or 2%; use thick coconut yogurt for dairy-free)
  • 2 large ripe bananas, mashed (about 1 cup / 240g)
  • ½ cup (130g) creamy peanut butter (natural, just peanuts and salt preferred)
  • 3 tablespoons (60ml) honey or maple syrup (optional, adjust based on banana sweetness)
  • 2 tablespoons (20g) chia seeds (optional, for thickening and fiber)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts or walnuts, dark chocolate chips, cinnamon or cocoa powder

Instructions

  1. Mash the bananas: In a mixing bowl, peel both ripe bananas and mash with a fork until mostly smooth with a few small lumps. If bananas are stubborn, microwave for 20 seconds to soften.
  2. Combine wet ingredients: Add milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk until peanut butter is fully incorporated. For easier mixing, warm peanut butter in microwave for 10 seconds before adding.
  3. Add dry ingredients: Add rolled oats, chia seeds, and salt to the wet mixture. Stir with a spatula until all oats are fully coated. The mixture will be liquidy—this is normal.
  4. Portion into jars: Divide mixture evenly among 4 to 6 jars (16 oz wide-mouth pint jars work well), filling each about ¾ full. Tap jars gently on counter to settle and remove air bubbles.
  5. Refrigerate overnight: Screw lids on tightly and refrigerate for at least 6 hours, preferably 8 to 12 hours (overnight).
  6. Add toppings and serve: In the morning, stir the oats (they should be thick and creamy). If too thick, stir in a splash of milk. Top with sliced banana, a drizzle of peanut butter, chopped nuts, chocolate chips, and a dusting of cinnamon. Serve cold or let sit at room temperature for 10 minutes.

Notes

Use rolled oats (old-fashioned) for best texture—not instant or steel-cut. The riper the bananas, the sweeter the oats. For a nut-free version, swap peanut butter for sunflower seed butter or tahini. For gluten-free, use certified gluten-free rolled oats. Oats keep in the fridge for up to 5 days; add toppings just before serving. Can be frozen for up to 3 months (thaw overnight in fridge).
