These Easy Peanut Butter Banana Overnight Oats are a creamy, no-cook breakfast that comes together in just 5 minutes. Made with simple ingredients like oats, peanut butter, and ripe banana, they’re perfect for busy mornings and can be customized endlessly.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk of your choice (whole, oat, or almond)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 medium ripe banana (about 120g mashed)
  • 12 tablespoons (15-30ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: Peel the ripe banana and add it to a Mason jar or container. Use a fork to mash it well until mostly smooth with a few tiny lumps.
  2. Add the peanut butter: Spoon in 3 tablespoons of creamy peanut butter. If cold, microwave for 10 seconds to soften.
  3. Add the liquid ingredients: Pour in 1 cup of milk, 1 tablespoon of honey or maple syrup (if using), and 1/2 teaspoon of vanilla extract (if using). Stir briefly to combine.
  4. Add the dry ingredients: Add 1 cup of old-fashioned rolled oats, 1 tablespoon of chia seeds (if using), and a tiny pinch of salt. Stir until fully combined, ensuring no dry pockets remain.
  5. Stir thoroughly: Stir for a full minute until the mixture is uniform and creamy, with no streaks of peanut butter.
  6. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 4 hours, preferably overnight.
  7. Stir and serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chopped peanuts, or cinnamon. Eat cold or microwave for 30-60 seconds for warm oats.

Notes

Use a jar with straight sides for easier mixing. Mash the banana first for creamy texture. Don’t oversweeten; adjust based on banana ripeness. Make a double batch for up to 5 days of breakfasts. Leave room for toppings. Warm up if preferred.
