A quick and satisfying snack made with a warm tortilla, creamy peanut butter, and a ripe banana, toasted to crispy perfection. Perfect for busy mornings, lunchboxes, or a fast treat.

Ingredients

Scale
  • 1 large flour tortilla (burrito size)
  • 2 tablespoons creamy peanut butter
  • 1 medium ripe banana
  • 1 teaspoon honey or maple syrup (optional)
  • 1 tablespoon mini chocolate chips (optional)
  • Pinch of cinnamon (optional)
  • 1 tablespoon crushed granola (optional)

Instructions

  1. Warm the tortilla in the microwave for 10 seconds until pliable.
  2. Spread peanut butter evenly over the tortilla, leaving a 1-inch border.
  3. Place the peeled banana at one edge of the tortilla. Add any optional toppings.
  4. Fold the bottom edge over the banana, fold in the sides, and roll tightly into a cylinder.
  5. Toast the roll-up in a non-stick skillet over medium heat for 1-2 minutes per side until golden brown.
  6. Let cool for 30 seconds, then slice crosswise into 1-inch pinwheels using a serrated knife. Serve immediately.

Notes

Warm the tortilla to prevent cracking. Use a ripe banana with brown spots for sweetness. Toast for a crispy exterior. For meal prep, skip toasting and store wrapped in the fridge for up to 2 days.
