A simple and flavorful roasted cherry tomato sauce perfect for canning, bursting with natural sweetness and smoky depth. This sauce is quick to prepare and ideal for preserving summer’s best tomatoes.

  • 6 large garlic cloves, peeled and smashed
  • 3 tablespoons extra virgin olive oil
  • A handful fresh basil leaves, roughly chopped (or 1 tablespoon dried basil)
  • 1 ½ teaspoons salt (sea salt or kosher salt preferred)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons lemon juice or vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse 4 pounds of cherry tomatoes and pat dry. Place them in a large mixing bowl.
  3. Add 3 tablespoons olive oil, 6 smashed garlic cloves, 1 ½ teaspoons salt, ½ teaspoon black pepper, and optional ¼ teaspoon red pepper flakes. Toss gently to coat evenly.
  4. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread tomatoes and garlic in a single layer, leaving space between pieces for even roasting.
  5. Roast in the oven for 25-30 minutes until tomatoes soften, skins blister, and juices caramelize slightly.
  6. Remove from oven and let cool for 10 minutes to prevent splattering when pureeing.
  7. Transfer roasted tomatoes and garlic to a food processor or blender. Add fresh basil and 2 tablespoons lemon juice or vinegar. Pulse or blend to preferred consistency.
  8. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  9. Ladle warm sauce into sterilized canning jars, leaving about ½ inch headspace.
  10. Wipe jar rims clean, place lids on, and process in a boiling water bath for 35 minutes for quart jars or 30 minutes for pint jars.
  11. Remove jars and let cool completely on a towel-lined counter until seals form.

Notes

Do not overcrowd the pan to ensure even roasting and caramelization. Use ripe but firm tomatoes to avoid watery sauce. Pulse the sauce for a rustic texture or blend smooth as preferred. Adding lemon juice or vinegar at the end brightens flavor and aids preservation. If sauce is watery after roasting, simmer gently for 10-15 minutes before canning. Ensure jars and lids are sterile and follow water bath processing times carefully for safe preservation.
