Instructions

  1. Preheat your oven to 425°F (218°C). Line a sheet pan with parchment paper or foil.
  2. In a medium bowl, whisk together 3 tablespoons olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and cayenne (if using) to make the marinade.

  10. Assemble bowls: Divide cooked rice among 4 bowls. Top with chicken, peppers, onions, black beans, and corn. Garnish with cilantro, avocado slices, lime wedges, and sour cream or Greek yogurt if desired.
