  • 2 large yellow onions, thinly sliced

  • 68 hoagie rolls or brat buns, toasted (optional)
  • Mustard, for serving (optional)

Instructions

  1. Prep the onions: Slice 2 large yellow onions into thin half-rings (about ¼-inch thick).
  2. Layer the slow cooker: Spread half of the sliced onions evenly across the bottom of a 6-quart slow cooker. Place the bratwurst links on top in a single layer.
  3. Add remaining onions and beer: Scatter the rest of the sliced onions over the brats. Pour the entire 12-ounce can or bottle of light lager beer over everything. Dot the top with the 2 tablespoons of butter.
  4. Cook low and slow: Cover and cook on LOW for 4 to 6 hours. Avoid cooking on HIGH to prevent brats from splitting or becoming tough.
  5. Check for doneness: After 4 hours, the brats should be cooked through (internal temperature of at least 160°F). The onions should be soft and translucent.
  6. Optional: Broil for crispy edges: Transfer cooked brats to a baking sheet lined with foil. Broil for 2-3 minutes per side until casings are browned and crispy. Meanwhile, use a slotted spoon to scoop onions into a serving bowl.
  7. Assemble and serve: Toast buns if desired. Place a brat in each bun, top with beer-braised onions, and add a drizzle of cooking liquid if desired. Serve immediately with mustard and other toppings.
