  • Flaky sea salt (for finishing, optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and dry your pumpkin seeds if they’re fresh from a pumpkin. Spread them on a clean kitchen towel and pat them dry thoroughly.
  3. In a medium mixing bowl, combine the pumpkin seeds, olive oil, smoked paprika, garlic powder, and fine sea salt. Stir until every seed is coated.
  4. Spread the seasoned seeds in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Bake for 15-20 minutes, stirring halfway through. At the 10-minute mark, pull the pan out, stir, and spread back out. Seeds are done when golden brown and fragrant.
  6. Remove from the oven and immediately sprinkle with flaky sea salt if using. Let cool completely on the baking sheet (about 10-15 minutes).
  7. Once cooled, taste and add more salt if needed.

Don’t skip drying the seeds thoroughly to ensure crunchiness. Watch the oven closely as seeds can burn quickly. Let seeds cool completely before storing to maintain crispness. Double the batch as they disappear fast. For a spicy kick, add ¼ teaspoon cayenne pepper. For a sweet version, add 1 tablespoon maple syrup.
