  • 1 tablespoon (15ml) honey
  • 2 tablespoons fresh rosemary, chopped

  1. Make the dough: In a large mixing bowl, whisk together 3 cups (375g) all-purpose flour, 1 teaspoon active dry yeast, and 1½ teaspoons fine sea salt. In a separate bowl or measuring cup, mix 1 cup (240g) sourdough discard, ½ cup (120g) pumpkin puree, 1 cup (240ml) warm water, ¼ cup (60ml) olive oil, and 1 tablespoon honey until smooth. Pour the wet ingredients into the dry and mix with a wooden spoon or your hands until a shaggy, sticky dough forms.
  2. Bulk fermentation: Cover the bowl with plastic wrap and let rest at room temperature for 30 minutes (autolyse). After 30 minutes, perform the first set of stretch and folds: wet your hands, grab one side of the dough, stretch it up, and fold it over the center. Rotate the bowl 90 degrees and repeat 4-6 times.
