  • 1/4 cup mixed fresh herbs (parsley, chives, dill), finely chopped
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 whole chicken (4–5 pounds)
  • Optional: 2 cloves garlic, smashed

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, chopped fresh herbs, salt, and pepper. Mix with a fork until evenly distributed.
  2. Prep the chicken: Remove chicken from packaging, pat completely dry with paper towels, and remove any giblets from the cavity.
  3. Apply the butter: Using your hands, rub the herb butter all over the chicken, including under the skin over the breast and thighs. Coat the outside generously.
  4. Place in the slow cooker: Put the chicken breast-side up in a 5-6 quart slow cooker. Do not add any liquid.
  5. Cook low and slow: Cover and cook on LOW for 4-5 hours, or on HIGH for 2.5-3 hours, until the chicken is tender and the internal temperature reaches 165°F in the thickest part of the thigh.
  6. Rest before serving: Carefully lift the chicken out of the slow cooker using tongs and let it rest on a cutting board for 10-15 minutes.
  7. Make the sauce: While the chicken rests, pour the juices from the slow cooker into a small saucepan. Skim off some fat if desired, then simmer on the stovetop for 5 minutes until slightly thickened.
  8. Carve and serve: Carve the chicken and spoon the pan sauce over the top.

Notes

For best results, use room temperature butter and fresh herbs. Do not add liquid to the slow cooker—the chicken releases its own juices. Let the chicken rest before carving to keep it moist. Leftovers keep in the refrigerator for up to 4 days and can be frozen for up to 3 months.
