Ingredients

Scale
  • 1 box yellow cake mix (Betty Crocker recommended)
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs, room temperature
  • 1/2 cup cream cheese frosting (store-bought or homemade)
  • 24 ounces candy melts in brown (for turkey bodies)
  • 8 ounces candy melts in orange (for beaks and feet)
  • 4 ounces candy melts in red (for snoods)
  • Assorted candy melts in fall colors: orange, yellow, red, brown (for feathers)
  • 1 tablespoon coconut oil or shortening (to thin candy coating if needed)
  • 24 lollipop sticks (6-inch)
  • Candy eyes (small round)
  • Orange sprinkles or small orange candies (for beak, or pipe orange candy melts)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, combine cake mix, water, oil, and eggs. Beat with electric mixer on medium speed for 2 minutes until smooth.
  3. Pour batter into prepared pan and bake for 25-30 minutes, until a toothpick inserted in center comes out clean. Cool completely.
  4. Crumble cooled cake into a large bowl into fine crumbs. Add 1/2 cup cream cheese frosting and mix with hands until mixture holds together when pressed (like damp sand).
  5. Scoop about 1 tablespoon of mixture and roll into smooth balls. Place on parchment-lined baking sheet. Refrigerate for at least 30 minutes.
  6. Melt brown candy melts in microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Add 1 teaspoon coconut oil if too thick.
  7. Dip tip of lollipop stick into melted coating, then insert halfway into a chilled cake ball. Dip entire ball into coating, tap gently to remove excess. Place in Styrofoam block to set.
  8. While coating is still wet, melt assorted fall-colored candy melts separately. Using toothpick or piping bag, dot back of each pop with small circles for tail feathers.
  9. Once brown coating is fully set (about 15 minutes), melt orange candy melts and pipe small triangle for beak on front. Use red melts to pipe teardrop shape above beak for snood.
  10. Attach two candy eyes with tiny dab of melted coating. Pipe two small orange lines at bottom for feet. Let everything set completely before serving.

Notes

Chill cake balls thoroughly before dipping to prevent crumbs in coating. Use cream cheese frosting for best texture. Work quickly when adding feathers before coating sets. Can be made ahead and stored in refrigerator for up to 5 days or frozen for up to 3 months.
