Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving on high for 10-15 seconds.
  2. In a large mixing bowl, combine the softened cream cheese and ranch seasoning mix. Use a hand mixer on low speed to blend until smooth and fluffy, about 30 seconds. Scrape down the sides.
  3. Fold in the shredded cheddar cheese using a rubber spatula until evenly distributed. Add any optional ingredients if desired.
  4. Lay out the flour tortillas on a clean, flat surface. If stiff, microwave for 5 seconds to make pliable.
  5. Divide the cream cheese mixture evenly among the tortillas. Spread in a thin, even layer (about 1/4 inch thick) all the way to the edges.
  6. Layer several slices of turkey over the cream cheese mixture, overlapping slightly to cover the entire tortilla.
  7. Starting at one end, roll each tortilla tightly, keeping the filling tucked in. Place seam-side down.
  8. Wrap each rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Place on a baking sheet or plate and refrigerate for at least 30 minutes (1 hour preferred).
  9. After chilling, unwrap the rolls. Using a sharp serrated knife, slice off the ragged ends (about 1/2 inch from each end). Slice the remaining roll into 1-inch thick pinwheels.
  10. Serve immediately or pack for lunch.
