Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Place them in a large bowl with the lemon juice to prevent browning.
  3. Make the filling: To the sliced apples, add maple syrup, cornstarch, cinnamon, nutmeg, and salt. Toss until every apple slice is coated. Let sit while you make the streusel.
  4. Make the oat pecan streusel: In a medium bowl, combine rolled oats, chopped pecans, flour, coconut sugar, cinnamon, and salt. Stir with a fork. Add cold butter cubes and use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse meal with some pea-sized butter chunks remaining. Do not overwork.
  5. Assemble the crisp: Pour the apple filling into an ungreased 8×8 or 9×9 baking dish and spread into an even layer. Sprinkle the streusel topping evenly over the apples. Do not press it down.
  6. Bake: Place the dish on the center rack and bake for 40-45 minutes, until the topping is golden brown and the apple juices are bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the remaining time.
