  • 4 ounces (120 ml) ginger beer
  • 1 ounce (30 ml) fresh lime juice (about half a lime)
  • 2 tablespoons pomegranate seeds
  • 1 to 2 teaspoons honey or agave syrup
  • 1 small cinnamon stick
  • 2 to 3 whole cloves
  • Ice cubes
  • Optional garnish: fresh rosemary sprig, lime wheel, extra pomegranate seeds
  • For the spice syrup (optional, makes extra): 1/2 cup (120 ml) water, 1/4 cup (60 ml) honey, 1 cinnamon stick, 4 whole cloves, 1 star anise (optional)

Instructions

  1. Make the spice syrup (optional, but recommended for multiple drinks): In a small saucepan, combine 1/2 cup water, 1/4 cup honey, 1 cinnamon stick, 4 whole cloves, and 1 star anise if using. Bring to a gentle simmer over medium heat, stirring occasionally until the honey dissolves. Let it simmer for 5 minutes, then remove from heat and let it steep for 15 minutes. Strain out the spices and let the syrup cool completely. (You’ll have enough for about 6 to 8 drinks.)
  2. Prepare your glass: Fill your copper mug or glass with ice cubes. Large cubes are best—they melt slower.
  3. Muddle the spices and pomegranate seeds: Drop the pomegranate seeds, cinnamon stick, and whole cloves into the glass. Use your muddler or wooden spoon to gently press and twist until the seeds release their juice and the spices start to smell fragrant.
  4. Add the sweetener and lime juice: Pour in 1 to 2 teaspoons of honey or agave syrup (or 1/2 ounce of your spice syrup if you made it). Add 1 ounce of fresh lime juice. Stir everything together with a long spoon until the honey dissolves.
  5. Add the pomegranate juice: Pour in 4 ounces of pomegranate juice. Stir gently to combine.
  6. Top with ginger beer: Add 4 ounces of ginger beer. Pour it slowly down the side of the glass to preserve the carbonation. Stir once, very gently.
  7. Garnish and serve: Add a sprig of fresh rosemary, a lime wheel, and a few extra pomegranate seeds on top. Serve immediately.

Notes

For best results, use premium ginger beer like Fever-Tree or Q Mixers. Muddling the spices is essential to release their flavors. Serve immediately as the ginger beer will go flat after about 10 minutes. For a crowd, make the spice syrup ahead and set up a self-serve bar.
