A quick and easy party snack featuring nutty brown butter, sweet honey roasted turkey, creamy brie, and fresh greens rolled into bite-sized pinwheels.

Ingredients

  • Large flour tortillas (10-inch)
  • Honey roasted turkey breast slices (8 ounces / 225 grams)
  • Brie cheese (6 ounces / 170 grams), sliced thinly
  • Unsalted butter (4 tablespoons / 57 grams)
  • Honey (2 tablespoons / 40 grams)
  • Fresh baby arugula or spinach (1 cup / 30 grams)
  • Fresh cracked black pepper (to taste)

Instructions

  1. Place 4 tablespoons (57 grams) of unsalted butter in a medium skillet over medium heat. Stir constantly as the butter melts, then begins to foam and turn golden brown (about 4-5 minutes). Remove from heat and immediately stir in 2 tablespoons (40 grams) honey until combined.
  2. Lay out each 10-inch flour tortilla flat on a clean surface. Warm for 10-15 seconds in the microwave wrapped in a damp paper towel if tortillas feel stiff.
  3. Using a pastry brush or the back of a spoon, evenly spread the warm brown butter honey mixture over each tortilla.
  4. Layer about 4 ounces (115 grams) of honey roasted turkey slices, followed by thin slices of brie (about 3 ounces / 85 grams), and a handful of fresh arugula or baby spinach on each tortilla. Sprinkle with fresh cracked black pepper to taste.
  5. Starting from one edge, tightly roll each tortilla into a log shape. Wrap the logs in plastic wrap or parchment paper and chill for 15-20 minutes to firm up.
  6. Using a sharp knife, cut each rolled wrap into 1-inch (2.5 cm) thick pinwheels. Arrange on a serving platter.
  7. Serve pinwheels at room temperature or slightly chilled. Store leftovers covered in the fridge and bring out 15 minutes before serving.

Notes

Do not rush the butter browning step to avoid burning. Chilling the rolled wraps before slicing helps keep pinwheels neat and prevents cheese from oozing. Use a sharp serrated knife for clean slices. Store leftovers wrapped tightly in the fridge for up to 2 days. Can be made ahead and refrigerated up to 24 hours before slicing.
