Smoky, spicy bacon-wrapped hot dogs paired with a creamy chipotle aioli create a quick and flavorful backyard cookout favorite that’s easy to prepare and sure to impress.

  • 8 strips thick-cut bacon
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup (120 ml) mayonnaise
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon garlic powder
  • 8 hot dog buns
  • Optional toppings: diced onions, shredded cheddar, fresh cilantro, pickled jalapeños

Instructions

  1. Prepare the Firecracker Seasoning: In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, brown sugar, salt, and black pepper. Mix well.
  2. Wrap the Hot Dogs: Wrap each hot dog with a strip of thick-cut bacon, spiraling it tightly. Secure with a toothpick if needed.
  3. Season the Bacon: Apply the firecracker seasoning evenly over the bacon-wrapped hot dogs using a brush or fingers.
  4. Make the Chipotle Aioli: Mix mayonnaise, finely chopped chipotle peppers, fresh lime juice, and garlic powder until smooth. Refrigerate until ready to use.
  5. Grill the Hot Dogs: Preheat grill or grill pan to medium-high heat. Grill bacon-wrapped hot dogs, turning every 3-4 minutes until bacon is crisp and hot dogs are heated through, about 12-15 minutes.
  6. Toast the Buns: Lightly toast buns on the grill for about 1 minute per side until golden and warm.
  7. Assemble: Place each hot dog in a toasted bun, drizzle with chipotle aioli, and add optional toppings as desired.
  8. Serve Immediately: Enjoy hot off the grill for best flavor and texture.

Notes

Keep the grill lid closed as much as possible to trap smoky flavor. If bacon crisps too fast, lower heat and cook longer. Secure bacon with toothpicks to prevent unraveling. Start with fewer chipotle peppers in aioli for milder heat and adjust to taste. Leftovers can be stored in fridge up to 2 days and reheated gently to keep bacon crispy.
