A quick and easy summer salad featuring smoky grilled peaches, creamy burrata cheese, and a spicy-sweet hot honey drizzle. Perfect for entertaining or a fresh, flavorful meal.

Ingredients

Scale
  • 3 ripe peaches, halved and pitted
  • 1 (8-ounce) ball burrata cheese
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons hot honey (see recipe below)
  • 2 tablespoons honey
  • 1 teaspoon red chili flakes
  • A handful of fresh basil leaves, torn
  • 1 tablespoon freshly squeezed lemon juice
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: arugula or mixed greens for serving
  • Optional: toasted pine nuts or walnuts for crunch

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 375°F/190°C), about 5 minutes.
  2. Halve and pit the peaches, brush cut sides with olive oil, and toss with a pinch of sea salt and pepper.
  3. Place peaches cut side down on the hot grill. Grill 3-4 minutes until grill marks appear and peaches soften. Flip and grill 2 more minutes on skin side to warm through.
  4. Make the hot honey drizzle: In a small saucepan over low heat, combine honey and red chili flakes. Warm for 2-3 minutes until fragrant. Remove from heat and let infuse for a few minutes. Strain if desired.
  5. Arrange a bed of arugula or mixed greens on a serving platter if using. Place grilled peaches on top.
  6. Tear burrata into chunks and scatter over the peaches.
  7. Sprinkle torn basil leaves and drizzle lemon juice evenly over the salad.
  8. Drizzle warm hot honey generously on top. Add a final pinch of sea salt and freshly ground black pepper.
  9. Optionally, sprinkle toasted pine nuts or walnuts for texture. Serve immediately.

Notes

Choose firm but ripe peaches to avoid mushy texture. Oil grill grates or pan well to prevent sticking. Warm honey slowly to avoid burning. Tear burrata by hand for best texture. Serve immediately for best flavor. Store leftovers up to 2 days, keeping hot honey separate.
