Turn pumpkin carving leftovers into an irresistible crunchy snack with this quick and easy recipe. Smoky paprika and coarse sea salt transform simple pumpkin seeds into a crowd-pleasing treat that’s perfect for fall gatherings.

  • 1 ½ cups fresh pumpkin seeds (about 180g)
  • 2 tablespoons olive oil (extra virgin or regular)
  • 1 ½ teaspoons smoked paprika (sweet smoked paprika recommended)
  • 1 teaspoon coarse sea salt (plus more for finishing)
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Separate the seeds from the pumpkin guts. Fill a large bowl with cold water and dump the pumpkin innards in. The seeds will float to the top; use your hands to gently separate them from the pulp.
  3. Rinse the seeds in a colander under cold running water, rubbing gently to remove any remaining pulp.
  4. Pat the seeds completely dry with paper towels. Spread them on a clean kitchen towel and let air dry for 10 minutes if possible.
  5. Transfer the dried seeds to a medium mixing bowl. Add olive oil, smoked paprika, sea salt, and optional garlic powder or cayenne. Toss until every seed is coated.
  6. Spread the seasoned seeds in a single layer on a baking sheet. Ensure no seeds are stacked.
  7. Roast for 20-25 minutes, stirring halfway through. Seeds are done when golden brown and crackling slightly.
  8. Remove from oven and let cool on the baking sheet for 5 minutes. Sprinkle with additional sea salt while warm. Transfer to a cooling rack to cool completely.

Notes

For best crunch, ensure seeds are thoroughly dried before roasting. Do not overcrowd the baking sheet. Seeds will continue to crisp as they cool. Store in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze for up to 3 months.
