  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon honey or maple syrup (optional)
  • Toothpicks or small skewers for assembling

Instructions

  1. Rinse the cherry tomatoes and basil leaves thoroughly. Pat dry with a kitchen towel to avoid watery skewers. Cut the mozzarella into bite-sized cubes or use small mozzarella balls as is.
  2. In a small bowl, gently tear the basil leaves into smaller pieces. Whisk together the olive oil, balsamic vinegar, salt, and pepper. Add the honey or maple syrup if using, and stir to combine. The drizzle should be smooth with visible basil bits floating in it.
  3. Take a toothpick or mini skewer and thread one cherry tomato, one mozzarella cube or ball, and a folded basil leaf. Repeat until all ingredients are used, usually about 20-24 mini skewers depending on tomato size.
  4. Lay the skewers on a serving plate or pack gently into lunchboxes. Spoon the basil drizzle evenly over the skewers. Add a small sprinkle of fresh cracked black pepper and sea salt for extra flavor.
