  • 2 large eggs, room temperature

  • ¾ cup (130 g) semi-sweet chocolate chips
  • Ganache Drizzle:
  • ½ cup (120 ml) heavy cream
  • 4 ounces (115 g) semi-sweet or bittersweet chocolate, chopped
  • 1 teaspoon unsalted butter (optional, for shine)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
  2. Grate the zucchini using the fine side of a box grater. Place grated zucchini in a clean towel and squeeze gently to remove excess water, keeping some moisture.
  3. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. In a large bowl, whisk melted butter with sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually fold dry ingredients into wet ingredients until just combined, avoiding overmixing.
  6. Fold in grated zucchini and chocolate chips evenly throughout the batter.
  7. Pour batter into prepared pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, checking at 30 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter.
  9. Cool brownies completely on a wire rack.
  10. To prepare ganache, heat heavy cream until just simmering. Pour over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then stir until smooth and glossy. Stir in butter if desired.
  11. Drizzle ganache over cooled brownies and let set about 15 minutes before slicing.
  12. Slice brownies using parchment paper overhang and serve.
