A healthier twist on classic apple crisp with a crunchy oat crumble and a luscious salted date caramel. This vegan, gluten-free dessert is quick to make and packed with natural sweetness and fiber.

  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1 tablespoon arrowroot powder (or cornstarch)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon sea salt
  • 1 1/2 cups rolled oats (use certified gluten-free if needed)
  • 1/2 cup almond flour
  • 1/3 cup coconut oil, solid but softened
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 cup Medjool dates, pitted (about 10–12 dates)
  • 1/2 cup warm water
  • 1/4 teaspoon sea salt, plus extra for sprinkling
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Make the salted date caramel: Place the pitted Medjool dates, warm water, sea salt, and vanilla extract in a small blender. Blend on high until completely smooth, about 30-60 seconds. Set aside.
  3. Prepare the apples: Peel, core, and slice the apples into 1/4-inch thick slices. Place in a large mixing bowl and toss with lemon juice immediately.
  4. Season the filling: Add the maple syrup, arrowroot powder, cinnamon, nutmeg, and sea salt to the bowl with the apples. Toss until evenly coated. Let sit while you make the crumble.
  5. Make the oat crumble: In a medium mixing bowl, combine the rolled oats, almond flour, cinnamon, and sea salt. Add the solid coconut oil, maple syrup, and vanilla extract. Mix with your fingers or a fork until the mixture resembles coarse sand with some larger clumps.
  6. Assemble the crisp: Pour the seasoned apples into a 9×13-inch baking dish and spread into an even layer. Drizzle about half of the date caramel over the apples. Sprinkle the oat crumble evenly over the top, covering the apples completely. Gently press the crumble down with your hands.
  7. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, until the filling is bubbling around the edges and the topping is golden brown. If the crumble is browning too quickly, tent the dish with foil for the last 10 minutes.
  8. Cool slightly: Let the crisp rest on a wire rack for at least 10 minutes before serving.
  9. Finish and serve: Drizzle the remaining date caramel over the top and sprinkle with a pinch of flaky sea salt.

Notes

For best results, use firm apples like Honeycrisp or Granny Smith. If dates are dry, soak in hot water for 10 minutes before blending. The crisp tastes even better the next day. Double the caramel for extra sauce.
