  • 1/4 cup milk (whole milk recommended)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/2 cup cooked crumbled sausage or bacon
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped green onion
  • 1/4 cup chopped spinach (fresh or frozen, squeezed dry)

Instructions

  1. Preheat your oven to 375°F (190°C). Give it a full 15 minutes to come to temperature.
  2. Grease your muffin tin generously with cooking spray, butter, or oil.
  3. In a large bowl, whisk the eggs and milk together vigorously for about 30 seconds until frothy and slightly thickened.
  4. Add the salt, pepper, and garlic powder. Whisk again just to combine.
  5. Stir in the cheese, cooked sausage, bell pepper, green onion, and spinach. Fold gently with a spatula until evenly distributed.
  6. Pour the mixture into the prepared muffin cups, filling each about 3/4 full. Use a ladle or 1/4 cup measuring cup for even portions.
  7. Bake for 15-18 minutes, or until the tops are set and lightly golden. A toothpick inserted in the center should come out clean.
  8. Let them cool in the pan for 5 minutes. Then run a knife around the edges and gently lift them out.
  9. Serve warm or let cool completely before storing.

Notes

For best texture, use room temperature eggs and full-fat dairy. Don’t overbake; pull them out when just set. Let them rest in the pan for 5 minutes to set structure. Grease generously to prevent sticking. For make-ahead, bake the day before and reheat in a 350°F oven for 5-7 minutes.
