Homemade Herb Butter Turkey Gravy: Easy 15-Minute Recipe

This silky, herb-flecked gravy is made from scratch in just 15 minutes using a secret compound herb butter. It’s the perfect, foolproof gravy for Thanksgiving, Christmas, or any holiday meal.

  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup pan drippings from roasted turkey
  • 1/4 cup (32 grams) all-purpose flour
  • 2 cups (480 ml) low-sodium chicken or turkey broth
  • Salt and pepper to taste

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, chopped rosemary, sage, thyme, parsley, garlic powder, salt, and pepper. Mash with a fork until herbs are evenly distributed. Set aside.
  2. Prepare the pan drippings: After roasting turkey, pour drippings into a fat separator or glass measuring cup. Let sit for a minute, then skim off most of the fat. Reserve 1/4 cup of the brown liquid.
  3. Make the roux: In a medium saucepan over medium heat, melt 2 tablespoons of the herb butter. Whisk in flour and cook, whisking constantly, for about 2 minutes until light golden and nutty.
  4. Add the drippings: Slowly pour in the reserved 1/4 cup pan drippings while whisking. Mixture will thicken into a paste; whisk until smooth and bubbly, about 30 seconds.
  5. Add the broth: Slowly pour in the 2 cups of broth while whisking constantly. Continue whisking until gravy thickens and coats the back of a spoon, about 3-4 minutes.
  6. Finish with remaining herb butter: Remove pan from heat. Whisk in the remaining 2 tablespoons of herb butter. Taste and adjust salt and pepper.
  7. Strain (optional): For perfectly smooth gravy, pour through a fine-mesh strainer into a gravy boat.
  8. Keep warm until serving: Cover gravy boat with foil or lid. If too thick, stir in a tablespoon of hot broth before serving.

Notes

Make the herb butter up to 3 days ahead and refrigerate. For a dairy-free version, use vegan butter. For gluten-free, substitute all-purpose flour with a gluten-free blend or cornstarch slurry. If gravy gets lumpy, strain through a fine-mesh strainer. Reheat gently on stovetop with a splash of broth.
