Juicy Smash Burger Sliders with Creamy Secret Sauce

These juicy smash burger sliders feature a crispy caramelized crust, tender meat, and a creamy homemade secret sauce, perfect for quick, satisfying meals and parties.

  • 1 lb (450 g) ground beef, 80/20 blend
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp vegetable oil or canola oil
  • ¼ cup (60 ml) mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp pickle relish
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 8 slider buns or mini brioche buns
  • 8 slices cheddar cheese (optional)
  • Thinly sliced red onions
  • Leafy lettuce or baby spinach
  • Tomato slices (optional)

Instructions

  1. Prepare the Secret Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, and smoked paprika. Stir until smooth and well blended. Cover and refrigerate.
  2. Form the Patties: Divide ground beef into 8 equal portions (about 2 oz / 60 g each). Lightly roll into loose balls. Season generously with salt and pepper on both sides just before cooking.
  3. Heat the Skillet: Place cast iron skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil and heat until shimmering but not smoking (around 375°F / 190°C).
  4. Smash and Cook Patties: Place 4 beef balls on skillet spaced apart. Using metal spatula, press down firmly to flatten to about ¼ inch (6 mm) thick. Cook undisturbed 2-3 minutes until edges are brown and crispy. Flip, add cheese slices if using, cook 1-2 minutes until melted and cooked through.
  5. Repeat for Remaining Patties: Remove cooked patties to warm plate, cover loosely with foil, repeat smashing and cooking for next 4 patties.
  6. Toast the Buns (Optional): Slice slider buns and toast cut-side down in another skillet or on griddle until lightly golden, about 3 minutes.
  7. Assemble the Sliders: Spread secret sauce on bottom bun, add lettuce leaf, juicy patty, tomato slice, and red onion rings. Top with bun lid and serve immediately.

Notes

Use cold beef and do not over-handle the meat to keep patties tender. Smash hard and quick within first 10 seconds for perfect sear. Season patties just before cooking. Use a sturdy metal spatula to scrape crispy bits. Toast buns while cooking second batch to save time. Cover skillet with lid for last minute to melt cheese perfectly.
