Creamy, naturally sweetened overnight oats with peanut butter and banana that take just 5 minutes to prep. A breakfast that even oatmeal skeptics will love.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk of choice (whole milk recommended)
  • ½ cup (120g) plain Greek yogurt
  • 1 large ripe banana, mashed (about ½ cup)
  • ¼ cup (64g) creamy peanut butter, plus extra for swirling
  • 2 tablespoons (30ml) maple syrup or honey
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the ripe banana in a medium mixing bowl until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract to the mashed banana. Whisk or stir until smooth and well combined.
  3. Stir in the rolled oats, chia seeds (if using), and a pinch of salt until evenly distributed.
  4. Divide the mixture evenly among 4 jars or airtight containers, leaving about half an inch of space at the top.
  5. Drop a small spoonful of peanut butter on top of each jar and swirl it through the top layer with a knife or spoon.
  6. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. Serve cold or warm. If warming, microwave an uncovered jar for 45-60 seconds, stirring halfway through. Stir before serving and add toppings if desired.

Notes

Use a very ripe banana with brown spots for natural sweetness. The oats taste even better on day two. For a nut-free version, use sunflower seed butter. For a vegan version, use plant-based milk, dairy-free yogurt, and maple syrup. Store in the fridge for up to 5 days; do not freeze.
