  • 1 cup milk (whole milk or 2%)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 large ripe banana, mashed
  • 3 tablespoons creamy peanut butter
  • 1 tablespoon peanut butter for swirling (optional)
  • 1/2 banana, sliced for topping
  • 1 tablespoon mini chocolate chips (optional)
  • 1 tablespoon chopped peanuts (optional)

Instructions

  1. Mash the banana in a small bowl until mostly smooth with a few small lumps.
  2. In a separate medium bowl, whisk together the milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Stir in the old-fashioned rolled oats, chia seeds, and a pinch of salt until evenly combined.
  4. Fold in the mashed banana and 3 tablespoons of peanut butter, stirring vigorously until fully incorporated.
  5. Divide the mixture evenly among 4 mason jars, leaving about 1/2 inch of space at the top.
  6. If using, warm the extra tablespoon of peanut butter for 10 seconds in the microwave, then drop small spoonfuls on top of each jar and swirl gently with a knife.
  7. Place a few fresh banana slices on top of each jar, pressing them in slightly.
  8. If desired, sprinkle mini chocolate chips or chopped peanuts on top.
  9. Screw on the lids tightly and refrigerate for at least 4 hours, preferably overnight.
  10. Serve cold or at room temperature. Stir before eating. If desired, microwave for 30-45 seconds for a warm version.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. Chia seeds need at least 4 hours to absorb liquid; overnight is ideal. These keep for up to 5 days in the fridge. For a nut-free version, use sunflower seed butter. For a dairy-free version, use plant-based milk and yogurt. For a gluten-free version, use certified gluten-free oats. If oats are too thick after chilling, stir in a splash of milk before serving.
