  • 1 large head of cauliflower
  • 2 large English cucumbers
  • 1 cup cherry tomatoes, halved
  • 1 cup baby carrots, cut into thin sticks
  • 1/2 cup black olives, sliced
  • 1/4 cup red bell pepper, cut into small triangles
  • Fresh parsley or cilantro for garnish (optional)
  • 1 cup plain Greek yogurt
  • 1/2 cup sour cream
  • 1 packet ranch seasoning mix
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Prep the Cauliflower Skull: Wash and dry the cauliflower head. Trim the bottom so it sits flat. Using a paring knife, carve two oval holes for eyes, a small triangle for the nose, and a jagged line for the mouth.
  2. Make the Cucumber Bones: Slice cucumbers into 1/4-inch rounds. Use a bone-shaped cookie cutter or cut each round into a rectangle and notch the ends to create bone shapes. Pat dry with paper towels.
  3. Prepare the Remaining Veggies: Halve cherry tomatoes, cut baby carrots into thin sticks, slice black olives, and cut red bell pepper into small triangles.
  4. Make the Dip: In a small bowl, whisk together Greek yogurt, sour cream, ranch seasoning, lemon juice, and a pinch of salt and pepper. Refrigerate until ready to serve.
  5. Assemble the Tray: Place the cauliflower skull in the center of a serving platter. Arrange cucumber bones around it like a sunburst. Scatter cherry tomatoes and carrot sticks around. Fill skull eye and nose holes with olive slices, and place a red bell pepper triangle in the mouth. Pour dip into a small bowl and set near the skull. Garnish with parsley if desired.
  6. Serve immediately or refrigerate. Best served within an hour of assembly.

Notes

For a vegan version, use plant-based yogurt and sour cream. For a spicy kick, add sriracha or chipotle powder to the dip. The dip can be made a day ahead for better flavor. Keep cucumber bones dry to prevent sogginess.
