  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 2 cans (10 oz / 284g each) diced tomatoes with green chiles, undrained
  • 1 can (15 oz / 425g) corn, drained
  • 1 packet (1 oz / 28g) ranch seasoning mix
  • 1 packet (1 oz / 28g) taco seasoning mix
  • 2 cups (480 ml) low-sodium chicken broth

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker.
  2. Pour the undrained diced tomatoes with green chiles, drained corn, and chicken broth over the chicken.
  3. Sprinkle the ranch seasoning mix and taco seasoning mix evenly over the top. Do not stir.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and cooked through.
  5. Using two forks, shred the chicken directly in the slow cooker.
  6. Stir the soup well. Taste and adjust seasoning if needed. Serve hot with desired toppings.

Notes

For a vegetarian version, omit chicken, use vegetable broth, and add 2 cans of drained and rinsed black beans or pinto beans. Cook on LOW for 2-3 hours. For a creamier soup, stir in 4 oz cream cheese or 1/2 cup heavy cream during the last 30 minutes of cooking. If soup is too thick, add extra broth; if too thin, cook uncovered on HIGH for 15-20 minutes.
