A quick and easy homemade iced coffee with a light, creamy pumpkin spice cold foam. Made with simple ingredients in under 5 minutes, this guilt-free fall treat is perfect for busy mornings.

  • 1 cup (240 ml) strong brewed coffee, cooled
  • ¼ cup (60 ml) cold low-fat milk (2% or 1%)
  • 1 tablespoon (15 ml) canned pumpkin puree (100% pure, not pie filling)
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • 1–2 teaspoons sweetener of choice (maple syrup, sugar-free vanilla syrup, honey, agave, or stevia)
  • Ice cubes (enough to fill a glass)
  • Optional: Pinch of extra pumpkin pie spice or cinnamon for garnish

Instructions

  1. Brew 1 cup (240 ml) of strong coffee using a dark roast or cold brew concentrate. Let it cool to room temperature.
  2. In a mason jar or jar with a tight-fitting lid, combine ¼ cup (60 ml) cold low-fat milk, 1 tablespoon (15 ml) pumpkin puree, ½ teaspoon pumpkin pie spice, ¼ teaspoon vanilla extract, and 1-2 teaspoons sweetener. Use a small spoon to break up the pumpkin puree and stir it into the milk.
  3. Screw the lid on tightly and shake the jar vigorously for 30-45 seconds until the mixture doubles in volume and becomes frothy.
  4. Fill a tall glass with ice cubes. Pour the cooled coffee over the ice, filling the glass about three-quarters full.
  5. Gently pour the cold foam over the back of a spoon onto the coffee to create a creamy layer on top.
  6. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam. Serve immediately with a straw.

Notes

For best foam, use very cold milk straight from the fridge. Shake vigorously for at least 30 seconds. If foam is thin, try using higher-fat milk (2% or whole). The foam base can be made ahead and stored in the fridge for up to 3 days. For a dairy-free version, use oat milk or unsweetened almond milk. For a hot latte, skip the ice and pour cold foam over hot coffee.
