Instructions

  1. Roast the poblanos: Preheat broiler to high. Place whole poblano peppers on a sheet pan. Broil 5-7 minutes per side until skin is charred and blistered. Transfer to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes.
  2. Peel and dice: After 10 minutes, peel off skins, remove stems and seeds, and finely dice the roasted flesh. Set aside.
  3. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook 5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
  4. Bloom spices: Stir in diced green chiles, cumin, oregano, and smoked paprika. Cook 1 minute, stirring constantly.
