  • 1 small yellow onion, finely diced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 cup low-sodium chicken or vegetable broth
  • 1 cup 2% milk (or any milk; oat milk works too)
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 2 ounces reduced-fat cream cheese, softened
  • 1 (4-ounce) can diced green chiles, undrained
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1/4 cup plain Greek yogurt or light sour cream
  • 1 tablespoon milk (for thinning yogurt)
  • 1 small black olive, sliced into thin rings

Instructions

  1. Shred the cheddar cheese on the large holes of a box grater. Measure out 8 ounces (about 2 cups, lightly packed). Let it sit at room temperature while you prep everything else.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and cook, stirring occasionally, for 4-5 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle the cornstarch over the cooked onions and garlic. Stir constantly for about 1 minute until it looks pasty.
  4. Slowly pour in the chicken broth while whisking continuously. Then, add the milk in a steady stream, still whisking. Bring the mixture to a gentle simmer. It will start to thicken after about 2-3 minutes, until it coats the back of a spoon.
  5. Reduce the heat to low. Add the shredded cheddar cheese and the softened cream cheese. Stir gently with a wooden spoon or spatula until everything is completely melted and smooth, about 2 minutes.
  6. Stir in the undrained can of green chiles, the ground cumin, and the smoked paprika (if using). Taste and add salt and pepper as needed. Remove the pot from the heat.
  7. Transfer the queso to a serving dish. In a small bowl, mix the Greek yogurt (or light sour cream) with 1 tablespoon of milk until it’s a drizzly consistency. Spoon the mixture into a piping bag or zip-top bag. Starting from the center of the dip, pipe a series of concentric circles about 1 inch apart. Then, using a toothpick or skewer, gently drag from the center outward to the edge of the dish, like pulling spokes on a wheel. Wipe the toothpick clean between each drag.
  8. Place the sliced black olive rings on the web to look like little spiders. Serve immediately.

Notes

Shred your own cheese for the smoothest melt. For a dairy-free version, use vegan cheddar shreds and plant-based cream cheese. The queso base can be made up to 2 days ahead and reheated gently. For a party, keep warm in a slow cooker on the ‘warm’ setting.
