Instructions

  1. Cook the bacon: Place your Dutch oven over medium heat. Add the chopped bacon and cook, stirring occasionally, until crispy and the fat has rendered, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Leave about 2 tablespoons of bacon fat in the pot.
  2. Sauté the aromatics: Add the diced onion and celery to the pot with the bacon fat. Cook over medium heat, stirring often, until the onion is translucent and softened, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Make the roux: Sprinkle the flour over the cooked vegetables. Stir constantly with your wooden spoon for about 2 minutes to cook out the raw flour taste.
