A lighter version of the classic hot buttered rum that feels indulgent with rich brown sugar and nutmeg, but without the heavy, greasy finish. Perfect for cozy evenings and holiday gatherings.

  • 1/4 teaspoon ground nutmeg, preferably freshly grated

  • 1/4 cup apple cider (unsweetened)
  • 2 ounces dark or spiced rum
  • 1/2 cup hot water or milk (for topping)
  • Optional garnish: Cinnamon stick, star anise, or a dollop of whipped cream

Instructions

  1. Make the butter batter (2 minutes): In a small bowl, combine the softened butter, brown sugar, ground nutmeg, cinnamon (if using), and a pinch of salt. Use a fork to mash and stir until everything forms a smooth, paste-like consistency. It should look like a thick, sandy dough—no streaks of butter remaining.
  2. Heat the liquids (3 minutes): In a small saucepan or kettle, bring the 1/4 cup hot water and apple cider to a gentle simmer. You want it steaming, not boiling—around 180°F if you’re using a thermometer. Pour the hot cider mixture into your mug.
  3. Combine the batter with liquid (1 minute): Add the butter batter to the mug with the hot cider mixture. Stir vigorously with a spoon until the butter and sugar are fully dissolved. The liquid should turn cloudy and fragrant, with a deep amber color.
  4. Add the rum (30 seconds): Pour in the 2 ounces of rum and stir gently to combine. The alcohol will warm through quickly, so don’t over-stir. Taste and adjust if desired.
  5. Top with hot water or milk (1 minute): Pour the remaining 1/2 cup of hot water (or milk) into the mug, stirring gently. If using milk, heat it first to avoid cooling the drink. The final mixture should be steaming and smooth.
  6. Garnish and serve (30 seconds): If desired, garnish with a cinnamon stick, star anise, or a light dusting of nutmeg. Serve immediately while hot.

Notes

For the smoothest texture, use a small whisk to combine the batter with the hot cider. The butter batter can be made ahead and stored in the fridge for up to a week; let it come to room temperature before using. If using salted butter, skip the pinch of salt. For a dairy-free version, use plant-based butter and oat milk or almond milk.
