Moist Apple Cider Donut Cake

  • 2 cups apple cider (for reduction)
  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup Granny Smith apples, peeled and finely diced
  • 1 cup confectioners’ sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon cinnamon (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low. Simmer for 15-20 minutes until reduced to 1/2 cup. Let cool completely.
  2. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray and dust with flour.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, beat softened butter and granulated sugar until light and fluffy (3-4 minutes).
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Add dry ingredients to the butter mixture in three parts, alternating with the cooled reduced apple cider. Start and end with dry ingredients. Mix on low speed just until combined.
  7. Gently fold diced apples into the batter.
  8. Pour batter into prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. While cake cools, whisk confectioners’ sugar, milk, cinnamon, and vanilla in a small bowl until smooth and drizzle-able.
  11. Drizzle glaze over completely cooled cake. Let glaze set for 15 minutes before slicing.

Notes

Ensure apple cider is reduced to concentrate flavor. Dice apples finely to prevent uneven baking. Do not overmix the batter to maintain a tender texture. Cool cake completely before glazing to prevent the glaze from melting.
