  • 1 ¾ cups (220g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ⅓ cup (80ml) vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 ½ cups grated zucchini (about 2 medium zucchinis), squeezed to remove excess moisture
  • ½ cup (90g) semi-sweet chocolate chips, plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. Grate the zucchinis finely using a box grater. Place the shredded zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
  3. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Stir in both sugars until well combined.
  4. In a separate bowl, beat the eggs with vegetable oil and vanilla extract until fully blended.
  5. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Do not overmix; a few lumps are okay.
  6. Fold in the grated zucchini and chocolate chips evenly without deflating the batter.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about 2/3 full. Sprinkle extra chocolate chips on top.
  8. Bake for 20–25 minutes. Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze out excess moisture from zucchini to avoid soggy muffins. Do not overmix batter to keep muffins tender. Use room temperature eggs for better texture. Extra chocolate chips on top add a crunchy, melty topping. Muffins taste better after a day or two.
