Instructions

  1. Preheat your oven to 375°F (190°C). Line your muffin tin with paper liners or grease it well.
  2. Brown the butter: Place the ½ cup unsalted butter in a light-colored skillet over medium heat. Swirl the pan occasionally as it melts. The butter will foam and bubble, then brown specks will form at the bottom (about 5-7 minutes).   4. Combine the wet ingredients: In a medium bowl, whisk together the browned butter and granulated sugar until smooth. Add the eggs one at a time, whisking well after each. Stir in the vanilla extract, pumpkin puree, and buttermilk until smooth.
  5. Make the streusel: In a small bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold cubed butter. Use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces. Refrigerate while you finish the muffin batter.
  6. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined. A few streaks of flour are okay—do not overmix.
